Lemon Pickle

Whole lemons, mustard seeds, fresh onion and turmeric in one perfect pickle. Excellent with fish, roast chicken, and cold meats. Mix with plain yoghurt and serve with cold salmon, or spoon over white rice and cover with freshly chopped herbs as a side dish with spicy curries.

Try this: Stuff the pickle under the skin of a chicken before roasting, occasionally spooning the lemony sauce that appears in the pan over the chicken whilst cooking.
