Roasted Chicken
1 apple
1 no.13 Organic Chicken
5 medium Kumara (sweet potato)
1 tbsp Organic Apple Glaze
Extra Virgin Olive Oil
Quarter the apple, leaving skin on, slice, place on bottom of roasting pan. Place whole chicken on the apple. Brush skin with olive oil. Cover and roast in pre-heated oven at 180°C for 1 hour (until chicken is cooked). Halfway through cooking the chicken, scatter the diced kumara around the chicken, continue to cook. Remove the chicken from the oven, cover and leave to rest. Scrape the apple from the bottom of the pan, mixing with the kumara. Sprinkle Apple Glaze over this mixture, turn up oven to 200°C and roast this mixture for another 10 minutes - be careful not to let it burn. Serve the chicken on a bed of caramelised apple and kumara with a warm french bean and avocado salad.
