Organic Apple Glazed Apple Cake
7 oz/225g Self raising Flour
1 oz/25g Cornflour
4oz/110g butter
4oz/110g Caster Sugar
2/3lb/250g Cooking Apples (peeled, cored & diced)
1 lemon (zest & juice)
2 large eggs and 1 tablespoon milk
2 oz/50gms currants
Topping
1 large cooking apple dredged in Forage Organic Apple Glaze
Organic Apple Glaze to finish
Grease and line an 8 inch round cake tin. Pre-heat oven 190C/375F
1. Sift flour and cornflour into a bowl
2. Cut butter into small pieces, rub into flour mixture to resemble fine breadcrumbs or put flour mixture and butter pieces into kitchen whiz until the mixture resembles fine breadcrumbs.
3. Stir in sugar, prepared apples, lemon and currants.
4. Stir in beaten egg and milk mixture well.
5. Spoon into prepared baking tin, flatten surface.
6. Dredge apple slices in Organic Apple Glaze
7. Place on top of mixture to resemble a fan
8. Bake in a preheated oven for 40 - 50 minutes
9. Turn out onto a wire rack.
10. Brush surface with Organic Apple Glaze before serving
